Six by Nico, a restaurant concept offering a six-course menu that changes every six weeks, was launched by chef Nico Simeone, who opened the first location called 111 by Nico in Glasgow in 2017.
Since then, the business has expanded to Aberdeen, three sites in Glasgow, Birmingham, Oxford, Dublin, Belfast, Cardiff, two sites in Edinburgh, Leeds, two sites in London, two sites in Manchester.
Plans are now underway to bring the concept to Nottingham to the former George’s fish restaurant which closed in September.
An application submitted to Nottingham City Council is for permission to modify the listed former bank building.
Proposed changes include updating flooring, moving the kitchen under the mezzanine to showcase more of the original stone features, replacing the wooden beach huts with new seats.
92 diners will be accommodated with 56 on the ground floor, 24 on a mezzanine floor and a 12-seater private dining room is also part of the plans.
