Michelin-starred chef serves exclusive bagel in Nottingham for one day only

Arran’s Bagels is teaming up with acclaimed chef Tom Sellers to serve a Michelin-starred bagel in the heart of Nottingham.

 

The Bridlesmith Gate bagel shop will unveil its star-studded special on Saturday, 3 October, when Tom, alongside chef Danny Khoury, will join the team for the exclusive collaboration.

 

While the full ingredient list is being kept under wraps, we can reveal that the exclusive bagel has been named The Bee Sting.

 

Arran Bailey, owner of ARRAN’S Bagels said: “We’re ready for queues on Saturday morning. This exclusive bagel is a complete one-off, so if you miss it on Saturday, it won’t be coming back. That’s the sting in the tail.”

 

“We’ve always been ridiculously picky about everything. Our bagels need exactly the right chew, crust, size and seeds, and every filling has to work perfectly. That’s why bringing a Michelin-starred chef into the mix made total sense. It’s even more exciting because Tom is a Nottingham lad who has done exceptionally well.”

 

Tom Sellers has enjoyed tremendous success over the years earning two Michelin stars. His flagship London restaurants include, Restaurant Story, Story Cellar and Dovetale, with further plans to open at Stoke Park in Buckinghamshire this Autumn.

 

Arran said: “I’ve known Tom for around 15 years through our shared love of Nottingham and good food. We can’t wait to welcome him and his mouthwatering culinary creation to our neighbourhood shop.”

 

ARRAN’S Bagels opened on Bridlesmith Gate in July and has already drawn a huge following. The team set out with one simple goal: to bring proper bagels, good coffee and an easy-going neighbourhood hangout to Nottingham.

 

At the helm of the business is Arran Bailey, Managing Director of ALB Group, whose projects have become a familiar part of Nottingham’s city centre in recent years. 

 

Best known for his regeneration and development projects across the country, this venture may be angled away from his usual business pathway, but it stems from the same passion he puts into all of his ventures. In this instance, it started with his love of ‘proper’ bagels.  

 

He said: “Every time we went to New York, we came home talking about how bagels fit into everyday life there. People grab one before work, eat one on a bench, pick one up on the way home or reach for one when they’re hungover. They’re simply part of the neighbourhood.”

 

“When we’d come back home it always felt like something was missing. Nottingham has loads of great coffee shops, bakeries and restaurants, but we couldn’t find the kind of bagels we kept going back for.”

 

Tired of searching for the perfect bagel and the vibe that goes with them, he set about creating his own bagel stop.

 

Arran’s Bagels is now proving there was a gap in the market. 

 

He said: “The shop has had a brilliant summer, with a steady stream of customers and regulars already making us their go-to neighbourhood spot. Now the students are back, the buzz is even bigger.”

 

 

“The classics are flying out. Our biggest hits are the Salt Beef alongside Sausage, Egg & cheese. But we wanted to shake things up a bit and that’s why we’ve launched this collab”

 

Earlier in the year they rolled out a Detroit style deep-dish pizza slices inspired by classic bagel fillings in collaboration with Slice ‘n Brew in Nottingham. Its popularity confirmed that the city was ready for some extra ‘wow’ factor alongside their favourites.

 

The Bee Sting will be served at Arran’s Bagels, on the corner of Bridlesmith Gate and Middle Pavement, on Saturday, October 3, from 10.00am until 2.00pm.
